Meatloaf Stir-fry

Recipe Time!

I recently posted a picture of "Meatloaf Stir Fry" to my story as a bit of a joke. It was my solution for leftovers, and it turned into something photo worthy and delicious. You requested the recipe, so I'm sharing it for all who want to give it a try!

This turkey meatloaf is gluten-free and dairy-free, with a paleo option. We have some food sensitivities in our house, so I've developed a knack for finding and adapting recipes. As usual, this recipe makes a lot, hence the leftovers. Cutting the ingredients in half would work well if you don't have a house of hungry teenagers like me. 😉

Turkey Meatloaf

• 1/2 large or 1 small yellow onion (optional - use 1 tsp onion powder for sensitive tummies)

• 2 cloves garlic (or 1/2 tsp garlic powder)

• 1/2 cup fresh parsley (or 1 Tbsp dried)

• 1 tsp paprika

• 1 tsp dried oregano

• 2 tsp sea salt or pink salt

• 3/4 tsp black pepper

• 2/3 cup gluten free oat flour or almond meal for paleo

• 2 Tbsp tomato paste (or use 1/2 the 6 oz can)

• 1 Tbsp organic Worcestershire sauce

• 2 large eggs, beaten

• 2.5 - 3 lbs ground turkey

Topping

• 2 Tbsp tomato paste (or the other 1/2 from above)

• 2 Tbsp refined coconut oil, melted


Instructions

  1. Preheat oven to 375. I like to put my coconut oil in a small glass or ceramic bowl to melt in the oven while it's preheating. If you do this, remember to take it out after a few minutes.

  2. Finely chop onion, garlic, and parsley. Add to a large mixing bowl.

  3. Add paprika, oregano, salt, pepper, flour, tomato paste, Worcestershire sauce and eggs to the bowl. Mix until well combined.

  4. Add the turkey to the bowl and gently combine until just incorporated. Use a wooden spoon or your hands. Don't over-mix, or it will become tough.

  5. Transfer meat mixture to 2 loaf pans.

  6. In a separate bowl, mix melted coconut oil and 2 Tbsp tomato paste. Spread mixture over your loafs.

  7. Bake for 50-60 min, or until the loaf pulls away from the edge of the pan. We usually check to make sure it measures 165° in the center.

With our meatloaf, we also had roasted potatoes and steamed broccoli. If I had multiple ovens, I would have roasted the broccoli too!

Roasted Potatoes and Sweet Potatoes

• 2-3 sweet potatoes, chopped to 1" pieces

• 3-4 Yukon gold or red potatoes, chopped to 1" pieces

• 1-2 Tbsp avocado or olive oil

• 3/4 tsp pink salt

• 1/4 tsp black pepper

• 1/2 tsp cumin

• 1/2 tsp paprika

• 1/2 tsp thyme

Instructions

  1. Preheat oven to 375

  2. Chop the potatoes. Put them in a bowl, or directly on a baking pan, if you want to cut down on dishes. ;)

  3. Drizzle the potatoes with oil and sprinkle with seasonings. (The above measurements are a suggestion. I don’t usually measure spices for this, and sometimes I add other spices if I’m in the mood. Follow your heart, friends!)

  4. Mix throughly.

  5. Spread evenly on baking pan and roast for about 45 minutes. They may take longer if your pan is overloaded or cook faster if you have more space.

  6. If you’re making these with the meatloaf, make sure your pans all fit in the oven at the same time. Cheers to efficiency!

Steamed Broccoli

We steamed our broccoli in the Instant Pot this time and it worked great.

Put your chopped broccoli in a steamer basket in Instant Pot. Add 1 cup water. Close the lid and set to Pressure Cook for 1 minute. Once it’s done, carefully vent the Instant Pot with manual release right away. The process will take about 10-12 minutes total from start to finish.

Finally, the inspiration for this post! I could have just reheated my leftovers in the microwave, but I tend to avoid that as much as possible. Yes, it’s a modern convenience, but if I can reheat things on the stovetop, that’s my preference.

Here’s how you can make it happen too:

Put a little water in the bottom of a skillet set at medium heat. Add the potatoes first, and cover the pan to let them start to steam. Chop some meatloaf into bite-size pieces and add them to the pan after about a minute. Cover and cook a couple more minutes. Finally, add the broccoli, stir, and cover to heat through. It’s ok to peek under the lid and give things a stir occasionally to make sure they’re not getting too hot or sticking to the bottom of the pan.
